Caroline Smith DeWaal is the director of the food safety program for the Center for Science in the Public Interest and co-author of Is Our Food Safe? A Consumer's Guide to Protecting Your Health and the Environment (Three Rivers Press, 2002). Since 1999, Caroline DeWaal has maintained and annually published a listing of foodborne illness outbreaks reported in the United States of America organized by food source that now contains over fifteen years of outbreaks reports. This database has been featured in papers and posters at numerous scientific and public policy conferences, both nationally and internationally. DeWaal is a leading expert on legal systems for regulating food in the USA and authored the Guidelines for Consumer Organizations to Promote National Food Safety Systems with WHO and FAO. Caroline DeWaal graduated from the University of Vermont and Antioch School of Law.
