A Model for Establishing Upper Levels of Intake for Nutrients and Related Substances: Report of a Joint FAO/WHO Technical Workshop on Nutrient Risk Assessment, 2-6 May 2005
There has been growing interest in 'safe' upper levels of intake for nutrient substances given changes in the world's food supply that include increased food fortification and supplement use. In response, a Workshop on nutrient risk assessment was jointly convened by the Food and Agriculture Organization of the United Nations (FAO) and the World Health Organization (WHO). Workshop participants were asked to develop an internationally applicable science-based approach -- or model -- to identify upper levels of intake for nutrient substances. The report from the Workshop takes into account existing national/regional approaches as well as the approaches established for non-nutrient substances.
