Biography
Flávia Beatriz Custódio is a Brazilian expert in Food Science and Professor at the Faculty of Pharmacy of the Federal University of Minas Gerais (UFMG). She graduated in Pharmacy with an emphasis in Food Biochemistry and her professional background includes roles as a health surveillance assessor, agricultural inspector, and researcher providing scientific support on food safety surveillance, data analysis, and regulatory standard-setting. Her expertise spans food biochemistry, toxicology, and contaminants analysis, particularly conducting human health risk assessments related to chemical residues, environmental contaminants, and other potential hazards present in food. Flávia is part of the FAO Roster of Experts for the Joint FAO/WHO Expert Committee on Food Additives (JECFA), and took part in the Joint FAO/WHO Expert Consultation on the risks and benefits of fish consumption.
