Ad hoc Joint FAO/WHO Expert Consultation on Risk Assessment of Food Allergens
For some people, certain foods may trigger an allergic reaction - a medical condition where their immune system mistakenly responds as it would to a danger. Allergens in food have been considered by the Codex Alimentarius on a number of occasions since 1993. WHO, in collaboration with the Food and Agriculture Organization of the United Nations (FAO), convened a series of ad hoc Joint FAO/WHO Expert Consultations on Risk Assessment of Food Allergens to update available advice on this important topic from 2020-2023.
