Ad hoc Joint FAO/WHO Expert Consultation on Risk Assessment of Food Allergens – reference dose(s) for cereals containing gluten or gluten

Overview

In response to the request from Codex Committee on Food Labelling (CCFL) for scientific advice on reference dose(s) (RfDs) and concentration for gluten and cereals containing gluten, FAO and WHO convened an expert consultation to provide recommendation on the level of RfDs and concentration for gluten and cereals containing gluten.

This document summarizes the conclusions of this meeting and is made available to facilitate the deliberations of the CCFL and Codex Committee on Food Hygiene (CCFH). The full report of the meeting will be published as part of the Food Safety and Quality Series.
